At 65 mph, I was at 2700 RPMs roughly on my new Impreza WRX TR 5 speed.

Good to know! I always thought the STi six speed had the sixth gear as a sort of overdrive gear. I am a bit of beginner here - what is the advantage of having more shorter gears as opposed to fewer taller gears ?

In track use it will keep you in the power band with each shift. Longer gears may drop the RPMs too much and move you out of the efficiency range of the turbo when up shifting. This is road course type use. For 1/4 mile people prefer longer gears for less shifting.
