Any ideas on what I can put this to use for? We already have media PC (Plex). I can make it a Arcade Machine, but in truth the stuff for the Raspberry PI seems to be much better sorted and the accessories are cheaper.

For real emulation an x86 machine is way better. It can also emulate much newer hardware than a pi is limited to. If it matters to you, which it doesn't sound like.
